Drop a spoonful of honey into a glass of water. Pure honey settles at the bottom as a thick lump without dissolving. Fake honey dissolves or spreads quickly.
Thumb Test
Place a small drop on your thumb. Pure honey stays in place due to its viscosity. Adulterated honey spreads or runs off quickly.
Flame Test
Dip a dry matchstick into honey and try to light it. Pure honey with low moisture content will ignite. Fake honey with added water will not burn cleanly.
Crystallization
